Cookies ala M&Ms

Unleashing the child in me, I love to see colors and chocolates!

Thinking of an afternoon snack for my loving husband, I decided to look for an easy to make recipe. I stumbled on this video by Laura Vitale and it just hit me..this is the perfect recipe on a lazy afternoon.



M&Ms Cookies Recipe


2 cups All-Purpose Flour, sifted
1 tsp salt
1 tsp baking soda
2 eggs
1 tsp vanilla extract
1 cup unsalted butter, softened
3/4 cup granulated sugar
2 cups M&Ms mini milk chocolate

1. Preheat oven to 350degrees Celsius. Prepare the cookie sheet covered by parchment paper or just spray it with non-stick spray.

2. Mix together the flour, salt, and baking soda. Set this aside.

3. In a separate bowl, cream the butter and sugar.

4. Then add the eggs and vanilla extract.

5. Afterwards, add in the dry ingredients.

6. Mix this for about 20 - 30 seconds. Lastly, add the m&m's mini milk chocolates.

7. Scoop in the cookie sheet 2 inches apart and bake it for 10-15  minutes. Or until the cookie sides are golden brown.

8. Take it our from the oven and let it cool.

Chewy Chocolate Crinkles

This is my all-time favorite cookies since my childhood days. I used to buy them at our school canteen and love how they melt inside my mouth. It has been a decade I think since I have eaten this so as I was browsing on the net and looking for interesting bakes, I saw this through youtube and I said to myself  "I got to try and make these!"

And so I did. I never imagined this will be so easy to make. So here it is, a simple step by step guide on how to make this heavenly snack (or dessert). Enjoy this with a cup of tea or milk while reading your book of the month.


For the ingredients, you will need the following (Sorry, I missed to take a picture of the ingredients as I was so ecstatic to see my finish product):


Chewy Chocolate Crinkles


300 grams semi-sweet chocolate chips
150 grams unsalted butter, 
2 eggs
1/2 cup granulated sugar
2 tsp vanilla extract
1 1/2 cup all-purpose flour, sifted
1/2 tsp baking powder
1/4 tsp salt
2/3 cup cocoa powder
1 cup confectioners/icing sugar

1. Melt the chocolate chips and the butter over a double broiler. Set aside and let it cool.


2. In a mixing bowl, beat the eggs and the granulated sugar, until creamy in texture.


3. Then add the vanilla extract/essence. 


4. Afterwards, add in the cooled down chocolate and butter mixture. Make sure it is at room temperature as you don't want your mixture to melt and the egg to be cooked.


5. Mix all your dry ingredients in a separate bowl - all purpose flour, baking powder, salt, and cocoa powder. It is best to sift them all together to make sure that all are blended evenly.


6. You may now add in your dry ingredients mixture to your chocolate mixture. Beat until everything is well incorporated.


7. Transfer the batter in a new bowl and cover it with a plastic wrap and let it sit in the refrigerator for a minimum of 3 hours. You may keep it there overnight also. This way we can make the batter into balls.


8. When it is hard enough to form into balls, preheat your oven to 350F.


9. Using an ice cream scooper or a tablespoon, form your batter into small balls. Let it roll over the confectioners sugar, until it has been fully covered.


10. Place it in a cookie sheet 1.5 inches apart as it will expand while baking.


11. Bake it for 8 to 15  minutes depending on your oven.


12. Let it cool a little bit. You may serve this warm or chilled.

Chocolate Chips Muffin

A muffin is an American English name for a type of bread that is baked in small portions. Many forms are somewhat like small cakes or cupcakes in shapes, although they are usually not as sweet as cupcakes and generally lack frosting.

Muffins are often eaten for breakfast, alternatively, they may be served  for tea or at other meals. There are many varieties and flavors or muffins made with a specific ingredient such as blueberries, cinnamon, banana, orange, strawberry, almond, and the most popular - chocolate chips.

Chocolate chips are small chunks of chocolate. Chocolate chips are often sold in a round, flat-bottomed teardrop shape.

According to Laura Vitale of www.laurainthekitchen.com, Everbody needs a good standard muffin recipe and she said that this is the best one. I have tried it and I absolutely loved it! Here below is my own version of her Chocolate Chip Muffins recipe, and I hope I did justice to it! My husband said - my favorite critic - it's delicious! Chocolate Chips Muffin

2 cups flour
1 tbsp baking powder
1/8 tsp ground cinnamon
1/2 tsp salt
1 bag chocolate chips
1/2 cup milk
1/2 cup melted unsalted butter
2 tbsp sour cream
2 eggs
1/2 tsp vanilla
1/3 cup white sugar
1/3 cup brown sugar

1. Pre-heat oven to 200 degrees Celsius. Line a 12 cup muffin tin with muffin cups.
2. In a small bowl, mix together flour, baking powder, cinnamon, and salt. Set aside.
3. In a separate bowl, toss the chocolate chips with half a cup of the mixed dry ingredients and make sure the chocolate chips are coated with the mixture.
4. Mix together butter, milk, eggs, vanilla, the brown and the white sugar. Mix well until everything is combined together. Add the dry ingredients mixture.
5. Then add the chocolate chips to the batter mixture. Use a spatula to fold in all the ingredients.
6. Put the batter in each of the prepared muffin tins with the use of an ice cream scooper.

7. Bake for 18 - 20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
8. Let it cool for 5 minutes and serve.
